What do you make for dinner on a weeknight when you are pressed for time? From time to time a hearty fibre rich sandwich is perfect for a quick meal.

The key to keeping this sandwich healthy is in the bread selection. At the very least the bread must be whole grain.  A step better is stone-ground whole grain bread.  Not all breads are made equal, so take the time to read the ingredients and compare brands.

It’s time to dust off your sandwich maker or panini press and enjoy this delicious sandwich.

Sautéed Mushroom and Onion PaniniSauteed mushrooms in a cast iron skillet on a white background

Loaf of stone-ground whole grain bread
8 oz mushrooms, sliced
2 cooking onions, sliced
1 clove garlic, diced
1 handful of baby spinach
1 tomato, sliced
1 slice of Havarti cheese per sandwich
1 tablespoon Extra Virgin Olive Oil

Sauté mushrooms, onions, and garlic in olive oil until cooked through. To build sandwiches, place 1 slice of cheese, tomato slices, and baby spinach on one piece of bread.  Top with mushroom and onion mixture.  Top with other slice of bread and put in the panini press until cheese is melted.  Serve with a fresh garden salad.
