I recently purchased a vegetable spiralizer and it has changed my life for the better. Pasta dishes are quick and easy weeknight meals but the high carbohydrate content in pasta is detrimental to our health.

A vegetable spiralizer is a kitchen gadget that can turn a vegetable into a spaghetti-like form. Zucchini seems to be the most effective vegetable to use and has a very similar texture and appearance as pasta.

Today’s recipe is a twist on the classic spaghetti recipe.  I’ve chosen to leave out the meat, simply because our goal is to inspire our readers to reduce their meat and animal product consumption.

Zucchini Pasta

Zucchini noodles in a bowl with fresh vegetables and cheese ** Note: Shallow depth of field1 green bell pepper, diced
2 onions, diced
8 oz mushrooms, diced
2 handfuls of spinach
2 cloves garlic, crushed
1 tbsp coconut oil
4 small zucchinis, spiralled
Favourite pasta sauce
Brewer’s Yeast (optional)

Sauté bell pepper, onions, mushrooms, spinach and garlic until tender. While vegetables are cooking, spiralize zucchinis.  When vegetables are cooked through add zucchini and pasta sauce and heat until sauce is hot.  For added flavour, sprinkle Brewer’s Yeast on top of spaghetti.

Note: Brewer’s yeast has a cheese-like flavour and allows this dish to remain vegan.
